Whenever I use vinyl in this way, I actually paint over it with the base color first (in this case, white) so that wherever it bleeds under, it will match, and also seal those spots more so the top color won't bleed under. It's worked like a charm so far! On projects where I want to keep the original wood color as the letters, I use Mod Podge on top of the vinyl first so the clear is what seeps and seals and then the color on top won't run under so much :)

Bleeding under the stencils? Around where the boards meet there will be some bleeding because of the stencil not sticking in those cracks really well BUT generally, painting away from the edge (from on top of the stencil to the middle of the design) will help. If you really want to eliminate bleeding- use a paint pen! They're genius :)

Not a dumb question! The Cricut has a setting specifically for vinyl so it does that perfectly and you don't have to think about it :)
